Some readers will remember my post from last week. My daughter brought home eight cookbooks. The first couple days she had her nose in the books and in the flour. Here are a few tea time yummies that she prepared for us from the cookbook The Young Chef's Mexican Cookbook.
Chocolate Mexicano (Mexican Hot Chocolate):
Ingredients: 1/2 cup sugar, 1/4 cup cocoa, 1/4 tsp salt, 1 tbsp plain flour, 1 tsp cinnamon, 1 cup cold water, 4 cups milk, 2 tsp vanilla extract
(1) Place sugar, cocoa, salt, flour, cinnamon, and water in a saucepan. Place over low heat and stire until dissolved into water.
(2) After dissolved, turn up temperature to medium high. Stir. Boil for 3 to 5 minutes, stirring.
(3) Add milk. Continue stirring till hot. Do not boil.
(4) Remove from heat and stire in vanilla extract. Serve!
The girls brought me a cup and you can definitely taste the cinnamon. It's very rich and chocolatey. : )

Ingredients: small flour tortilla, vegetable oil for frying, cinnamon & sugar
(1) Cut uncooked tortilla shells into quarters (we also did some cut out as hearts for Valentine's Day, just as we made edible snowflakes the year before).
(2) Lightly fry each side of tortilla in cooking oil in frying pan until slightly browned.
(3) Sprinkle with cinnamon and sugar. Serve hot.
