I asked What do I do with Flour Tortillas leftover from Hurricane Ike? and look at the recipes I received (Thank you, Ladies!):
Pizzas w/ a little sauce, toppings and cheese
Round Lasagna---use tortillas in place of noodles
Breakfast Wrap w/ eggs and bacon for breakfast
Bean Casserole---chop meat with taco seasoning and throw some beans in. Alternate tortillas, bean/meat mixture, and cheese.

We get a lightly oiled cast iron skillet(be sure its good and hot), some shredded cheese (cheddar and/or peeperjack) and make quesadillas here quite frequently. My crew never seems to get tired of them. Cut into wedges and a little sour cream and salsa on the side and its lunch! Leftover taco meat sandwiched in there with the cheese is tasty, too. ~ from Chris

We slather them with PB&J and made roll-ups . Chicken or tuna salad with lettuce are quite good rolled up in a tortilla. You can also use a cream cheese spread (flavored with salsa or seasonings is nice), add lunchmeat, roll, chill (if possible), then slice into appetizer-type servings. ~ from Servant

For lunch today I'm using leftover chili from last week (was frozen) and rolling it in flour tortillas with some cheese and sour cream! You can also make breakfast burritos, with eggs, sausage, and cheese (YUM!) You can use them in place of lasagna noodles in either regular or mexican lasagna. ~ from Lisa

Brush with melted butter, then sprinkle with cinnamon sugar. Cut into wedges and bake until crisp. These also make great dippers with a chocolate pudding + cool whip type of combination. I think I had this at a Pampered Chef party.
Oh, and fried, then dusted with powdered sugar and a drizzle of chocolate sauce, they go great with Mexican fried ice cream. ~ from Tami

Another possibility is mu shu pork (take out or homemade) -- Mandarin pancakes are similar in composition to flour tortillas so they adapt beautifully. Just brush the tortillas with a bit of sesame oil before filling them and rolling them, then heat in a covered skillet.
Another: use as crepes and fill with chicken and broccoli, or smoked salmon and scrambled eggs... bake, topped with cream sauce.
More: Layer deli meats, cream cheese or mayo, and grilled veggies and/or lettuce, tomatoes, onions. Roll up and secure with toothpicks. Slice into 1-inch pieces.

I make Mexican lasagna....
I layer meat, beans and cheese with tortillas and then I pour enchilada sauce over the whole thing.

You can also make nice hors d'oeuvres we like what are called garlic bites. You mix garlic into cream cheese and then spread on a tortilla and roll 'em up. Refrigerate to set then slice into pinwheels. I've added other spices and such into it and they're great.
Also---very simple---tortillas make a great bread to go with any number of soups/stews.
Fajitas is another use. Sliced meat (beef or chicken) cooked with spices and some sauted peppers and onions and the cold toppings of cheese, sour cream, lettuce, tomato etc.
You can also make layered enchiladas with these. I prefer the corn tortillas in red enchiladas but these are perfect in the chicken cream sort of white enchiladas. I make a white sauce with green chile and onion and layer chopped up cooked chicken (or turkey) with layers of tortilla torn to fit the pan and the sauce and jack cheese (to keep it white). ~ from Jodie

I found this great Martha Stewart recipe last week that everyone loved - black bean and tortilla pie. You saute the onion, garlic and cumin - add beans and bear and cook until beer has almost evaporated. Corn can be added if desired. Layer in a pie pan (or even better a spring cake tin) tortillas, black bean, cheese - ending with cheese and topping with scallions. Bake. Yum yum it was a big hit here. ~ from Marilyn

A standard lunch here is a cheese crisp - just top w/cheese and bake for a few minutes.
Boil up some chicken breasts.
Shred it.
Chop up an onion (I use sweet), and in a LARGE pan fry it in a little oil (you can use garlic too). Add shredded chicken, half-to-a-whole-package of cream cheese, 1/2 cup sour cream, and 1/2 cup milk. (All approximate and depends on how much chicken you use. It should be VERY moist but not soupy.) Add cumin to taste (but DON'T leave it out - about a teaspoon?) You can also add ground hot pepper if you like spice. I also do a bit of salt and pepper, granulated garlic maybe....
Now, usually I start rolling up this mixture in the tortillas, and putting them into a large baking dish. Then, I pour green enchilada sauce(mild or medium) over the whole thing, top with shredded cheese, cover with tinfoil and bake for about an hour. (I have done it with red sauce, but it is not as good, IMO. You need to use the green sauce for it to taste "right.")
Whenever I bring it to any potluck it goes like crazy.
You can also just layer if you don't feel like rolling.
You can also add in other things, like red pepper, or spinach, etc.
