2 cans tuna, 2 chopped eggs, 1/2 cup finely diced unpeeled Granny Smith apple, diced plum tomato, 1/2 cup mayonnaise, 1 tbsp. finely slivered fresh basil leaves, toasted peasant bread
Toss the tuna, eggs, tomato, and apples together. Season with a little salt if desired.
Stir mayonnaise and basil together then gently fold into the tuna mixture.
Serve as a salad on buttered lettuce with toasted peasant bread as an aside or as sandwiches on the toasted peasant bread.
